Ingredients

tablespoon
olive oil

cup
Greek yogurt

tablespoon
lemon juice
⅓
cup
tahini

tablespoon
honey or maple syrup
1-2
cloves
minced garlic
(use more or less, if preferred)

teaspoon
salt
4-5
tablespoon
water
(to thin out the dressing)

handful mint leaves
(chopped)
Instructions
In a medium bowl or jar, whisk or mix olive oil, Greek yogurt, lemon juice, tahini, honey (or maple syrup), minced garlic, and salt.
Gradually add water, one tablespoon at a time, whisking until the dressing reaches your desired consistency.
Stir in the chopped mint leaves, mixing well to combine.
Use immediately or refrigerate in an airtight container for up to
5 days
. Stir before using.
Notes
Taste and adjust
the dressing to your liking. Add more lemon juice for tang, honey for sweetness, or salt and pepper, to taste.
