    Tahini Greek Yogurt Salad Dressing

    Now, here is a simple Tahini and Greek yogurt salad dressing you will want to make on repeat!

    I may sound like I am exaggerating, but this dressing is truly an experience. Creamy, tangy, and full of rich, nutty flavor, it adds a delicious Mediterranean touch to all of our bean and chickpea salads. And it's not just salads that it makes flavorful, we are talking about any meal!

    Made with just a few wholesome ingredients, it's also quick and easy to whip up.

    ingredients

    • Olive oil.
    • Greek yogurt.
    • Lemon juice.
    • Salt and pepper.
    • Minced garlic.
    • Tahini.
    • Honey or maple syrup for sweetness.
    • Fresh mint leaves - or your favorite fresh herbs.

    how to make it

    Start by grabbing a medium bowl or a jar with an airtight seal. Into it goes the olive oil, Greek yogurt, lemon juice, tahini, honey (or maple syrup), minced garlic, fresh mint and salt.

    Fresh mint takes this dressing to the next level, as it pairs well with the creamy tahini and Greek yogurt. I know some of you don't like mint, so go ahead and use your favorite herbs, if you prefer.

    Give everything a good whisk until it starts coming together (or if you're using a jar, just seal it and give it a good shake).

    Now, gradually add water - just one tablespoon at a time, whisking in between. This helps control the consistency, so whether you want it thick and creamy for a dip or light and pourable for salads, you can adjust accordingly.

    And that’s it! You can use it immediately or store it in an airtight container in the fridge for up to 5 days. Just give it a stir before using, as tahini tends to thicken when chilled.

    Taste and adjust the dressing to your liking. Add more lemon juice for tang, honey for sweetness, or salt and pepper, to taste.

    This yogurt and tahini dressing adds a delicious Mediterranean touch to any meal! It is perfect for drizzling over green salads, grain bowls, bean salads, roasted veggies, or using it as a dip.

    Serve it with falafel, kebabs and yufkas, with rice dishes, over bread, alongside roasted meats, and much more!

    storage

    Once tahini has been mixed with water, like in this recipe, it needs to be refrigerated and will keep in the fridge for 5-7 days tops!

    It can still develop a bitter taste over time due to factors like the quality of sesame seeds used, or the roasting process. If your dressing starts tasting bitter, add some honey or maple syrup to balance it out.

    Ingredients
      

    • 3 tablespoon olive oil
    • ½ cup Greek yogurt
    • 2 tablespoon lemon juice
    • ⅓ cup tahini
    • 1 tablespoon honey or maple syrup
    • 1-2 cloves minced garlic (use more or less, if preferred)
    • ½ teaspoon salt
    • 4-5 tablespoon water (to thin out the dressing)
    • a handful mint leaves (chopped)

    Instructions
     

    • In a medium bowl or jar, whisk or mix olive oil, Greek yogurt, lemon juice, tahini, honey (or maple syrup), minced garlic, and salt.
    • Gradually add water, one tablespoon at a time, whisking until the dressing reaches your desired consistency.
    • Stir in the chopped mint leaves, mixing well to combine.
    • Use immediately or refrigerate in an airtight container for up to 5 days. Stir before using.
