I may sound like I am exaggerating, but this dressing is truly an experience. Creamy, tangy, and full of rich, nutty flavor, it adds a delicious Mediterranean touch to all of our bean and chickpea salads. And it's not just salads that it makes flavorful, we are talking about any meal!
Made with just a few wholesome ingredients, it's also quick and easy to whip up.
ingredients
- Olive oil.
- Greek yogurt.
- Lemon juice.
- Salt and pepper.
- Minced garlic.
- Tahini.
- Honey or maple syrup for sweetness.
- Fresh mint leaves - or your favorite fresh herbs.

how to make it
Start by grabbing a medium bowl or a jar with an airtight seal. Into it goes the olive oil, Greek yogurt, lemon juice, tahini, honey (or maple syrup), minced garlic, fresh mint and salt.

Fresh mint takes this dressing to the next level, as it pairs well with the creamy tahini and Greek yogurt. I know some of you don't like mint, so go ahead and use your favorite herbs, if you prefer.
Give everything a good whisk until it starts coming together (or if you're using a jar, just seal it and give it a good shake).

Now, gradually add water - just one tablespoon at a time, whisking in between. This helps control the consistency, so whether you want it thick and creamy for a dip or light and pourable for salads, you can adjust accordingly.
And that’s it! You can use it immediately or store it in an airtight container in the fridge for up to 5 days. Just give it a stir before using, as tahini tends to thicken when chilled.

It can still develop a bitter taste over time due to factors like the quality of sesame seeds used, or the roasting process. If your dressing starts tasting bitter, add some honey or maple syrup to balance it out.
