    Easy Ground Beef and Kidney Beans

    Kidney beans, ground beef, and canned diced tomatoes round up this easy and healthy recipe.

    what you’ll need

    • Cooking oil.
    • Onion & garlic.
    • Ground meat - Use beef, pork, or a mix of both.
    • Salt & pepper.
    • Spices – Paprika (smoked or sweet) and cumin for warmth.
    • Canned tomatoes - I like to use canned tomatoes for convenience and because this recipe is all about keeping it easy and quick, these work great. Fresh tomatoes work too, so feel free to use them if you prefer.
    • Beef stock or water.
    • Canned kidney beans - Rinsed and drained.
    • Chopped fresh parsley - optional, to garnish.

    how to make

    We start by heating some oil in a large pan over medium heat. Once it’s nice and warm, add the onions. Cook them for about 2-3 minutes, just until softened and fragrant.

    Then, in goes the garlic—only 30 seconds because garlic burns quickly, and we don’t want that!

    Next, add your ground meat of choice. I personally love using ground beef only as it is more lean, but go with what you have! A mix of beef and pork adds extra flavor.

    Cook for about 5 minutes, so the meat browns.

    Season with salt, pepper, cumin, and paprika. As it cooks, break it up with your spoon so you don’t end up with big chunks. Keep stirring until it’s browned all over.

    Cumin and ground paprika work very well with kidney beans and ground beef, so don't leave them out! Stir them in well so the meat is nicely coated.

    Time to bring everything together! Pour in the canned tomatoes and beef stock (or water), give it a good stir, and bring it to a simmer.

    Let it cook for about 15-20 minutes so the sauce thickens.

    At this point, I like to add the kidney beans. They’re already cooked, so they don’t need long - just 5 minutes to warm through and soak up the flavors of the ground meat and kidney beans.

    And that’s it! Serve it hot. Oh, and don’t forget a sprinkle of fresh herbs if you have them - this makes everything taste that much better!

    • Potatoes - mashed potatoes, baked, or roast potatoes all work well.
    • Rice, pasta or polenta.
    • Bread (crusty bread, dinner rolls, or flatbread).
    • Roasted vegetables.
    • Steamed greens (spinach, kale, or Swiss chard).
    • Quinoa or couscous.
    • Sour cream.

    how to store

    Ground meat and kidney beans stores well, 3-4 days in the fridge and up to 3 months in the freezer.

    Allow the dish to cool completely before transferring it to an airtight container and keeping in the fridge or freezer.

    • 1-2 tablespoon cooking oil
    • 1 medium-sized onion (diced)
    • 2 cloves garlic (minced)
    • 1 lb ground meat - approximately 450 grams (use ground beef, pork, or a mixture of both)
    • salt and pepper to taste
    • 1 teaspoon ground sweet or smoked paprika
    • ½ teaspoon cumin
    • 1 can canned tomatoes - 14.5 oz or 411g (or 4-5 large fresh tomatoes)
    • ⅓ cup beef stock or water
    • 1 can kidney beans - 15.5 oz can, approximately 440grams (drained and rinsed)

    Instructions
     

    • Heat oil in a large pan over medium heat. Add the diced onion and cook for 2-3 minutes until softened. Stir in the minced garlic and sauté for another 30 seconds until fragrant.

    • Add the ground meat to the pan, and stir to combine. Allow the meat to brown, about 5 minutes.

    • Pour in the canned tomatoes and beef stock (or water). Stir well, bring to a simmer, and let cook for 15-20 minutes stirring from time to time, until the sauce thickens.

    • Add the kidney beans, stir and cook covered for a further 5 minutes.
