    Avocado Cilantro Lime Yogurt Dressing

    This creamy cilantro lime avocado dressing with Greek yogurt is a must-try! Tangy, fresh, oil-free and requiring less than 5 minutes to make, it is perfect for salads, bowls, tacos, or as a healthy dip.

    ingredients you will need

    • 1 ripe avocado.
    • Greek yogurt.
    • a handful fresh cilantro leaves - about 1 cup.
    • juice of 1 lime.
    • 2-3 cloves garlic.
    • salt and pepper to taste.
    • ¼ cup water or milk (to thin out the dressing) - not pictured.

    how to make avocado lime yogurt dressing

    Add all the ingredients to a food processor and blend at a low speed until smooth and creamy. Too thick? Add a splash of water or milk and blend to loosen it to your liking.

    Taste, tweak the seasoning if necessary, and that's it. Transfer the dressing to a jar and serve or pop the lid on and store it in the refrigerator for later!

    adapt the dressing to your taste

    • Add more lime juice for more tang.
    • You can also add some cayenne pepper or jalapenos if you prefer your dressing spicy.
    • Use less water if you prefer a thicker consistency and add more water for a lighter salad.
    • Feel free to use your favorite herbs in addition to, or instead of, cilantro. Parsley, chives, dill, or basil all work beautifully.

    refrigeration

    Transfer the dressing to a sterilized jar and keep it in the fridge for up to a week.

    You may notice your avocado dressing turning brown after a few days in the fridge. This is because avocados oxidize when exposed to air. It's completely natural and doesn't mean it has gone bad.

    If you notice this, simply give it a good stir. If the flavor and smell are still fresh, it should be perfectly fine to eat.

    I always say this is one of those dressings that literally go well with just about anything! Serve it with:

    • Fresh green salads.
    • Pasta salads and pasta bowls.
    • Grain salads and bowls packed with quinoa, beans, rice, or farro.
    • Tacos, burritos, or quesadillas.
    • Chickpea and bean salads.
    • Grilled chicken, fish, or shrimp.
    • Roasted or steamed vegetables.
    • As a dip for fresh veggie sticks or pita bread.

    Ingredients
      

    • 1 ripe avocado
    • ¼ cup Greek yogurt
    • 1 handful fresh cilantro leaves - about 1 cup
    • juice of 1 lime
    • 2-3 cloves garlic
    • salt and pepper to taste
    • ¼ cup water or milk (to thin out the dressing)

    Instructions
     

    • Add all the ingredients to a bowl and process with a hand blender until smooth and creamy. You can also use a blender or food processor.
    • Taste and adjust salt and pepper, if needed. If the dressing is too thick, blend in a little water until you reach your desired consistency.
    • Serve immediately or store in a glass jar with an airtight lid.
