    Some dressings are so simple, you almost don't need a recipe; but when the balance is right, they're worth writing down. This Lemon Olive Oil Dressing is tangy, smooth, and just sweet enough to round out the flavors.

    Ready in just a few minutes, this lemon dressing works with just about everything from leafy greens to grilled veggies. I make a jar of it at the start of the week, and it magically disappears before Friday.

    • Maple syrup - adds a gentle sweetness that balances the acidity.
    • Garlic cloves - for some punch.
    • Dijon mustard - helps emulsify the dressing and adds a subtle tang.
    • Salt & pepper to taste.

    Add the ingredients to a jar with a tight-fitting lid. Shake until everything is well combined. Taste and adjust seasoning if needed. Done!

    • No jar? Just whisk in a bowl until the dressing looks creamy and combined.

    Store in a glass jar or airtight container in the fridge for 5-7 days. If the olive oil solidifies, just let it sit at room temperature for 10-15 minutes, then shake well before using.

    This fresh and tangy lemon olive oil salad dressing is perfect for salads, grilled veggies, grain bowls, and easy to make ahead.

    Equipment

    Small bowl or jar with lid for mixing or shaking the dressing
    Measuring cups and spoons

    Ingredients
      

    • ⅓ cup extra virgin olive oil
    • Juice of ½ lemon about 1½-2 tbsp
    • 1 teaspoon maple syrup or honey
    • 1 clove garlic minced
    • ½ teaspoon Dijon mustard
    • Salt and pepper to taste

    Instructions
     

    • Add the olive oil, lemon juice, maple syrup, garlic, Dijon mustard, salt, and pepper to a jar with a tight-fitting lid.
    • Shake until fully combined and emulsified.
    • Taste and adjust seasoning if necessary.
    • Serve immediately or store in the fridge for later.

    Notes

    • Store it in the fridge for up to 1 week.
    • Let come to room temperature and shake before serving.
